Delicious Nuts & Honey (Gluten-Free) Muffins

I developed this recipe because I am temporarily giving up wheat products and refined sugar in order to try and get my stomach problems in check. However, I think this recipe would work equally well even with wheat flour. This recipe makes about 10 muffins, so double if you're planning on lots!


Ingredients:
1/3 c pecans
1c honey + 3tbsp
1 + 1/2 tsp cinnamon
2 cups rice flour (or wholewheat flour if you insist)
2 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg or allspice (optional)
2 eggs
1 tsp vanilla
3/4 c water (milk or soymilk can be substituted)
1/2 cup butter (softened)

Tools:
2 bowls, 1 large, 1 small.

Preheat the oven to 350F. If the pecan pieces are too big, wrap them in a towel or in a plastic bag and beat them with a rolling pan until sufficiently crushed. Then put the pecans (not the bag or towel!) on a baking tray and roast them for 10-15 minutes. (This step is unnecessary if the pecans are already roasted. If they are, preheat oven to 375.)

While they are roasting, mix 1/2 tsp of cinnamon and 3 tbsp of honey in a small bowl. Set aside.

In a large bowl mix the eggs, vanilla, 1 cup of honey, butter and water. (You can use soy milk or milk if you choose)

By this time the pecans should be done, so up the oven temperature to 375F and remove the pecans if you haven't already.

Blend the flour, baking powder, salt, 1 tsp cinnamon and nutmeg or allspice into the eggs/honey/butter mixture.

Mix together your dry and wet ingredients from the big bowls and blend with a whisk or eggbeater until they are throroughly mixed. Mix in the pecans too.

Spoon the batter into your muffin tray. Then spoon the honey/cinnamon mix from the small bowl onto each as a sort of topping. Pop them in the oven when it reaches 375F. They take about 20 minutes to cook.

Once they cool you can serve them up or put them in tupperware to be reheated later! If you want them warm later, wrap them in tin foil, refrigerate, and then heat them up in the oven later. For a work snack repeat use plastic wrap and zap them in the office microwave.
