25-Minute Pizza

This is an excellent recipe in order to use up veggies and other odds and ends in the fridge before they go off. It's also pretty fun to do and takes no time at all, especially if you own a food processor or a blender (and even if you don't...) And if you don't, hurry to Loblaws and get one of those mini-mixers! They're like, 10$! No kidding!

Crust!
1 cup flour, preferably wholewheat
1/2 tsp. baking powder
1/2 tsp salt
pinch of pepper
red pepper flakes or other spices as desired
1/2 cup milk
1 egg

Topping!
Bunch of parsley (or basil) (1/2 cup when chopped)
2 cloves garlic
1/4 cup olive or other oil
2 tbsp balsamic vinegar
1 cup grated mozzerrella (or other cheese)
sliced veggies as desired (I used green peppers and tomatoes)

Tools!
Baking pan
Rubber spatula (or spoon)
Food processor or blender (optional)
Cheese grater

You start with the crust. It's not a traditional pizza crust. It has a slightly cakier consistency, but it tastes nice and light and is easy and fast. It also goes well with the toppings.

Preheat the oven to 400F. Then combine all the dry crust ingredients. I added red pepper flakes for a bit of spice, but anything goes, basil, oregano, anything, heck, even dried garlic flakes. Then you add the wet ingredients until the dough is moist but not runny. Pour the thick mixture onto a baking tray (greased if necessary) and then with a rubber spatula smooth it all out into a circular pile of dough. It should be about 9 inches in circumference. Then put it in the oven for 10-15 minutes or until it's cooked.

While the dough is cooking chop up the parsley. If you have a blender or a food processer, stick it in there along with the garlic cloves and olive oil. If not you'll have to chop the parsley by hand and then combine it with pressed or diced garlic and olive oil in a bowl. I confess, this may in that case become half-hour pizza.

Then grate the cheese (which can also be done in a food processer) and chop a few veggies. I used green peppers and cherry tomatoes.

This is the fun part! When the crust is ready, put the parsley mixture on first, spreading it evenly with a fork. Then arrange the vegetables and through a splash of balsamic vinegar across them. Finally, sprinkle your cheese on top of all the veggies.

Return the pizza to the oven and let it bake for 10 minutes. Then broil it on the top shelf for another couple of minutes to get the top nicely browned.

Slice, dice, and it's ready to go!
